Abstract

The drying activity of sea cucumbers has become one of the main production issues
because the drying process takes place in an open environment and takes a long
time, specifically between 3 to 5 days. The aim of this research is to design and
conduct experiments on a cabinet-type sea cucumber dryer to produce products with
a maximum moisture content of 15% in a shorter time. The analysis used is
descriptive, starting with the design of the drying equipment and followed by testing
the final product produced. The treatments in this study include drying at
temperatures of 60°C, 90°C, and using sunlight. The research results show that to
achieve a maximum moisture content of 15%, the drying method using a
temperature of 90°C yields a faster drying time of 23 hours. The quality produced
has an organoleptic value of 7.67 and a moisture content of 12.59%
